Carrot cake is one of the most delicious desserts out there. It's simple, moist, and full of flavour. The cake is made with carrots, brown sugar, cinnamon, ginger, and walnut pieces and topped with cream cheese frosting. The dessert can also include pineapple, raisins, coconut, and other fruits that provide a natural sweetness. Carrot cake is the perfect treat to enjoy with a cup of tea or coffee.
Step 1. Preheat the oven to 160 degrees С. Prepare either two 2lb loaf tins, 12 muffin tins, or two eight inch round sandwich tins. Grease and line with parchment paper or use premade liners.
Step 2. Take a large bowl and sieve together the flour, baking powder, bicarbonate of soda, soft brown sugar and cinnamon. Add the nuts or sultanas, the grated carrots, soya milk, oil, syrup, and vanilla. Use a wooden spoon or spatula to carefully combine all the ingredients to avoid lumps of sugar or flour spoiling your bake.
Step 3. Pour the batter into the tins. Bake muffins for 25 minutes, sandwich cakes for around 30 minutes and loaves for around 40 minutes. To test if they are done, pop a skewer in and check if the cakes make no “singing” noise. Allow the cakes to cool in the tins for several minutes, then turn out onto a wire rack until completely cold.
Step 4. To make frosting, take a large bowl, soften the margarine there and gradually add the icing sugar. Add the vanilla extract. To make the frosting lighter and fluffier, use an electric whisk.
Step 5. Dust muffins with icing sugar or optionally add a swirl of frosting or a few nuts too. Split loaf cakes and fill with the frosting and a layer of orange jam or marmalade. Cover and fill two round cakes with frosting.
