Pronounced as ‘fuh’, Pho bo is the national dish of Vietnam, commonly cooked with rice noodles and flavourful beef stock. Light and rich in proteins, this appetizing soup is one of the renowned popular comfort foods worldwide and making it doesn’t take too long at all. The straightforward recipe creates an utterly addictive dish, featuring the smooth texture of the chewy noodles, perfectly combined with the tender slices of beef. Ingredients

  • 100g of beef tenderloin (blanched)
  • 100g of beef chuck
  • 300g of dried rice noodles
  • 100g of bean sprouts
  • 50g of red onion
  • 50g of green onions
  • 2 teaspoons of fish sauce
  • 2 cups of beef stocks
  • 4 tablespoons of hoisin sauce
  • pepper for seasoning
  • 1 lime
  • red chilli
  • coriander
  • mint leaves
  • Thai basil

Step 1. Before cooking, soak the dried rice noodles in warm water and set aside. In a plenty of boiling water, cook the beef chuck, skimming off any foam, until tender and juicy. Make sure to reserve the liquid.

Step 2. Then blanch the beef tenderloin in a pot of boiling water for 5 minutes. Once the time is up, remove the beef from the pot using tongs and place it in iced water for another 5 minutes. Add more ice, if necessary, then drain the meat, and let it dry at room temperature.

Step 3. Cook the pre-soaked rice noodles according to the packet instructions. It usually takes about 1 minute. Once softened, drain and place the noodles into a serving bowl.

Step 4. Blanch the bean sprouts in salted boiling water for 2 minutes. It is important not to overcook them. Place the bean sprouts into iced water, then drain, and leave to dry.

Step 5. Cut the blanched beef tenderloin and boiled beef chuck into paper thin slices. Add the sliced meat and cooled bean sprouts to the noodles. Pour the hot beef stock into the serving bowl, add the fish sauce, and top with the sliced red and green onions. Season with a pinch of black pepper.

Step 6. Before serving the soup, season it with the hoisin sauce and a squeeze of lime. Add the cut up red chillies and garnish with the chopped coriander, mint leaves, and Thai basil. Enjoy your Vietnamese meal!
