Staple for breakfast and afternoon tea, chebab is a thin Emirati version of pancakes, popular in most Arab countries. The famous dessert is traditionally made with yeast and topped with buttery honey sauce, jam, dates syrup, or cream cheese. Especially delectable with the aromatic combination of cardamom and turmeric added to the dough, the crispy chebab has its own place even in Ramadan meals and doesn’t require any special skills to cook. Follow the step-by-step directions below and indulge in the rich taste and smooth texture of these delicious pancakes.

Ingredients

  • For dough:
  • 1.2L of warm water
  • 1 egg
  • 200g of sugar
  • ¼ teaspoon of dry yeast
  • 1 teaspoon of salt
  • ½ teaspoon of turmeric powder
  • 1 tablespoon of cardamom powder
  • 200g of all-purpose flour & 800g of wheat flour
  • butter for greasing
  • For garnish:
  • 1 tablespoon of cream cheese
  • 1 tablespoon of honey or 1 tablespoon of dates syrup

Step 1. In a large mixing bowl, combine the warm water, sugar, and dry yeast. Add the salt and turmeric powder as well. Crack the egg into the mixture, whisk well, and leave at least for 10 minutes.

Step 2. Once the yeast and sugar dissolve, add the cardamom powder, all-purpose baking flour as well as the whole wheat flour and mix together until the batter reaches creamy consistency. Cover the bowl and keep aside in a warm place for 2 hours or so.

Step 3. When the batter is thick and smooth, heat and grease the non-stick frying pan with the butter and pour one portion of the mixture with a ladle. Carefully form a round pancake and cook over medium flare until it turns golden brown and crispy. Flip the pancake and heat the other side.

Step 4. Arrange freshly fried chebab on a serving plate and drizzle with the honey or dates syrup. Alternatively, spread the cream cheese over it and garnish with fresh berries or sesame seeds.
