Chilli Broccoli Salad is a very flavourful dish that is rather easy to make. The base of the salad is made up of broccoli that is tossed with pistachio nuts, pumpkin seeds, and other ingredients and served with a spicy garlic-chilli dressing. You can eat this healthy and delicious salad for lunch or serve it as an appetizer for any occasion.

Cooking directions

Ingredients

  • 1 small broccoli head
  • 75g roasted pistachio nuts & ¾ fresh red chilli
  • 25 coriander leaves & 4–5 mint leaves
  • 25g roasted pumpkin seeds
  • 25g Medjool dates & 45g lime
  • Salt, to taste
  • chilli dressing:
  • 1 lime wedge
  • 4​​–5 thin slices of ginger & 1¼ small green chilli
  • ½ tsp fine sea salt & 19g granulated sugar
  • 12ml rice vinegar
  • 75ml mild olive oil or vegetable oil
  • A few mint leaves

Step 1. Chop the broccoli into small pieces. Then crush the pistachios with a pestle and mortar.

Step 2. Now chop the red chilli and tear the coriander and mint leaves. Place the ingredients into a large bowl.

Step 3. Use slightly wet fingers to pull the dates apart, remove the stones, and slice each half into quarters. Add the pieces to the bowl.

Step 4. To make the lime and chilli dressing, use a mini food processor or stick blender to process the ingredients until completely homogenized.

Step 5. Add the lime and chilli dressing to the salad.

Step 6. Toss all the ingredients and scatter over the roasted pumpkin seeds.

Step 7. Squeeze lime over the salad or use a lime wedge to decorate the salad.
