Pastrami is a smoked and cured deli meat made from a beef lower chest. Katz's Pastrami hash is thrillingly easy to cook and deeply satisfying to eat! Juiciest slices of corned beef, crispy potatoes, and caramelized onions are sauteed together until golden brown. This meat-and-potatoes dish is perfect for leftovers after holidays and friendly for quickly made breakfasts. It’s rich and filling even without the eggs, but you can also serve it with eggs, it only adds a few extra minutes to cooking.
Step 1. Boil corned beef hash in a pot of boiling water for 8-10 minutes, keeping it fully submerged.
Step 2. While corned beef is boiling, saute potatoes in a large saucepan with cooking oil.
Step 3. Let potatoes get crispy while sauteing, then add onions & spices. Continue to brown until corned beef is fully reheated.
Step 4. Take corned beef hash out of water and add it into a saucepan. Mix and spread out evenly over the pan. Increase the heat to medium high and press down on the mixture with a metal spatula. Let it cook for ~5 minutes until the meat gets a little crispy.
Step 5. Garnish with parsley or chives, or add a fried egg on top. Serve & enjoy!
